Menu items include dishes such as chorizo biscuits, beef-stuffed empanadas, grilled sweet breads with Dungeness crab, plus a well curated wine and cocktail list featuring local favorites and South American best bets. The grill-forward menu draws from classic Argentine cooking techniques, paired with fresh local Northwest ingredients. On the hotel’s ground floor is Patagōn, an Argentine-inspired restaurant anchored in the middle by a massive, custom-built open grill, known as a Parilla, tended to by skilled grilling artisans known as asadores. Larger plates include Grilled Pork Belly with charred rapini and gochujang suace ($15) and Seared Foie Gras with tomato confit and pepitas ($23). For something to nibble on, the Hamachi with uni and soy glaze, Skewered Sweetbreads, and Radishes with smoked butter and sea salt are all delicious choices. The menu has small bites as well as more entrée-sized plates. If you’re looking for a spirit-free drink, the New Day with white peaches, lemon, grenadine, and soda water is effervescent and not overly sweet. This smooth amber aperitif has a sweet edge and a hint of orange. Under the ‘Classic Cocktails’ section, the Hanky Panky is mixed up with gin, vermouth rouge, and fernet. The Balor Club cocktail with novo fogo silver, lemon, orange, cinnamon, sherry, and tiki bitters is fresh and tropical, served over crushed ice and a sprig of mint.
